Induction only works with magnetic cookware. Not "most" cookware — magnetic specifically. And a large share of what sits in a typical Indian kitchen is not: the aluminium kadhai, the classic aluminium pressure cooker, brass and copper vessels, and most non-stick pans with aluminium bases. Buyers routinely order a cooktop, unbox it, and find that half their utensils simply don't heat.
The test takes five seconds: hold a fridge magnet to the base of the pan. If it sticks firmly, it will work. If it doesn't, it won't — no setting, no adapter shortcut, no exceptions.

Indian cooking is heat-hungry in bursts — tempering, searing, bringing a large pot of sambar to a boil — so wattage matters more here than for slow Western-style cooking.
